CHEESE PUDDING 1
8 slices white bread, buttered (crusts
removed)
1/2 lb. cheddar cheese (sharp)
3 whole eggs
1 tsp. salt
1 scant tsp. mustard
1/4 tsp. red pepper
2 c. milk
crust and lightly butter 8 slices white bread; cut into cubes. Grate 1/2 pound sharp cheddar cheese. Alternate in baking dish with bread, finishing with cheese layer on top. Beat 3 whole eggs, 1 teaspoon salt, 1 scant teaspoon mustard, 1/4 teaspoon red pepper. Add 2 cups milk to egg mixture. Pour over bread-cheese mixture and let stand in refrigerator at least 8 hours preferably overnight. This is good at breakfast, brunch of lunch. Bake at 350 degrees for about 40 minutes.
