YAM FLOWERS
6 lg. onions, cooked
2 c. mashed yams
2 tbsp. evaporated milk
1 tbsp. butter
1/2 tsp. salt
Dash of pepper
Dash of paprika
Remove center from onions; spread "petals" to enlarge cavity. Fill with yams mixed with milk, butter, salt and pepper. Place onion centers on top. Dot with butter and sprinkle with paprika. Bake in buttered dish for 25 minutes, adding hot water to prevent sticking. Serve with pork roast or fresh ham.
